Chocolate and Courgette



Yes, I know it’s not a normal combination, but recently we’ve been inundated with courgettes. Not just from those grown in our garden, but also the neighbours have kindly donated extras from their veg patch. The other week we had a visitor over for lunch, she loves chocolate so the pudding had to involve chocolate. The main course had to include roast potatoes for her son. We like to oblige people’s favourites!




So we decided to make a pudding which would use up some of the courgettes and of course, chocolate. So chocolate and courgette brownies were made. The courgettes added an extra moistness to the brownies, but didn’t have a strong taste to scare off any courgette haters. They do look a bit peculiar, because the courgettes are grated and therefore peak out from the slices when they are cut. Though most people guess it’s courgette rather than cucumber, which was what one person suggested. Now cucumber and chocolate is a much scarier combination! And they are very popular, they disappeared very quickly.


Courgette and Chocolate Brownies
Ingredients
120g softened butter
125ml sunflower oil
100g caster sugar
200g soft brown sugar
3 eggs, beaten
130ml milk
350g plain flour
2 tsp baking powder
4 tbsp cocoa
450g courgettes, peeled and grated finely
175g chocolate chips
1 tsp vanilla essence

Instructions
Heat oven to 190ºC/350ºF

  1. Line a 20 x 35cm baking tray with parchment paper.
  2. Mix the butter, oil and sugars together until light and fluffy.
  3. Gradually add the eggs, one at a time, then the milk and mix thoroughly.
  4. Sift the dry ingredients together and fold into the mixture.
  5. Stir in grated and peeled courgettes, vanilla, chocolate chips and pour into the tin.
  6. Bake for 35 - 45 minutes. Depending on how gooey you like your brownies.
  7. Cut into squares whilst still warm.
